Hot, tasty tomato soup is nourishing, rich and full of flavor. The best part about tomato soup is that it's a favorite with almost everyone and it's so easy to make!
You will need:
Drizzle a little olive oil into the bottom of a large soup pan and add the onion and garlic. Cook for 5 minutes to release the flavors a little, stirring occasionally so they don't burn. Add the remaining ingredients and cook over a medium heat for 15 minutes, or until the tomatoes are softened. Stir the soup occasionally during the cooking.
Remove the pot from the heat and allow it to cool for a few minutes. Then ladle the mixture into your blender and blend until smooth. Alternatively you can use a stick blender to blend the soup right from the pot. Transfer the blended soup back to the pot and reheat a little, but don't allow it to boil.
